The Advanced Pizza Course is designed for those who are familiar with the industry and are looking for more intensive, hands-on experience and a deeper understanding of what makes a great pizza chef, and how to make a great pizza.

The 1-to-1 pizza making course, held in Dublin, at Ireland’s first professional pizza making academy is what you need to become the great pizza chef you deserve to be. We place great emphasis both on teaching skills and on building the confidence of each learner. This is a practical course led by pizza chef Mihai Hogaș – Master Pizza Instructor – who has spent thousands of hours in the kitchen as an Executive Pizza Chef, holds graduation diplomas from prestigious academies in Italy (such as the Pizzaioli Academy, where he was a trainer and examiner) and who, above all, has a great love for his profession.

  • The importance of the chosen flour as an ingredient, each of its types and its application in both manual and machine dough preparation.
  • How to design and realise a personalised dough.
  • The quality of the ingredients and their importance.
  • The kneading – the three modes.
  • The calculation of the ideal water temperature to obtain a perfect dough, adapted to the selected kneading mode.

Practical

  • The mechanical preparation of the dough with the Biga & Poolish method.
  • The preparation of a Neapolitan-style pizza.
  • The preparation of a Roman-style pizza.
  • The preparation of a New York style pizza.
  • The correct use of the oven for each type of pizza.
  • The preparation of a delicious and fibre-rich bread using pizza dough.
  • The preparation of a Dessert Pizza.
  • The preparation of a Fried pizza.
  • The preparation of a Gourmet Pizza.
